1 kg chicken wings
Salt and pepper
Glaze ingredients
50g freshly chopped garlic
30g freshly chopped ginger
40g fresh chopped spring onion
3 tbs soy sauce
3 tbs fish sauce
3/4 tbs hot chilli sauce
3 tbs lime juice
4 tbs honey
salt and pepper

To serve
Coriander
Smoked chillie flakes
Lime wedges

Spray a large baking tray with a cooking spray or olive oil.
Combine all glaze ingredients together in a bowl, whisk until all ingredients are well combined. Pour half of the sauce into a saucepan and reserve for later.
Season the wings with salt and pepper and place them on the prepared baking dish. Pour the sauce over the wings and toss to coat evenly. Arrange the wings in a single layer and bake for 10 to 15 minutes.
While the wings are in the oven, bring the remaining glaze to a simmer on low medium heat, until t (about 3 to 5 minutes bubble)
Once the chicken wings are cooked on the one side, rotate each piece and bake for an extra 10 minutes. Change oven to grill on a medium to high-heat. Then baste the chicken wings and allow to crisp up for a further for 5 minutes. Once the wings are golden, remove them from the oven and baste them again with the glaze.
